
Tai Ping Hou Kui (literally translated as “Monkey Champion”) is a typical baked green tea produced around Hou Keng, Houcun village, in Taiping County, Huangshan City. It is not far from where Huang Shan Mao Feng is produced, but two teas are quite different.
Tai Ping Hou Kui has a fame that its both sides are sharp, without loosing, curling up or edge curling. There are three grades: Hou Kui, Kuijian, Jian Cha, and among them, Hou Kui is the best.
This premium Tai Ping Hou Kui is from the original Hou Kui area. The leaves are green with little red, which is called “red silk thread” as the typical high quality characteristics. While tasting, you can feel its special charm, first brewing on fragrance, second brewing on strong taste, and remain the elegant fragrance during the third and fourth brewing.

Green tea has a very long history in China. Now there are many varieties of green teas growing in over 20 provinces in China while the most well known are from Zhejiang, Anhui and Jiangxi provinces. Green tea is heated to 180°C temperature and is not fermented, which allows the tea to keep most ingredients compared to other tea variations. High quality green tea should have a green color (both leaf and soup) and have a long lasting bittersweet and nutty fragrance with freshly sweet flavor.
