Junshan Yellow Silver Needle 2011

JunshanYellow Silver Needle (Junshan Yin Zhen in Chinese) is one of the famous yellow tea in China. It is grown on Junshan island in Hunan Province. Same kind of tea trees are also planted in other places around Dongting lake, where Junshan island is located; however, those teas grown outside Junshan island should not be called Junshan Yellow Silver Needle. The island is so small that the production amount of Junshan Yellow Silver Needle is very limited every year, which makes it one of the rarest teas.

Mouya Junshan Yellow Silver Needle tastes and smells very close to Silver Needle White tea, but slightly stronger. This tea allows at least 5 times refill and even with long time brewing, it would not taste bitter.

Please enjoy a tea dance while drinking this tea. While brewing this tea, and buds will generally ‘stand up’ after they absorb water. When the buds absorb enough water, they will slowly drop down and stand at the bottom of the cup… Every time when you refill the cup, there are some buds ‘dancing’ in the water. The tea will keep tasty until all the buds drop to the bottom. I recommend you to use a glass or tall cup for this tea, and allow enough room for the buds to ‘dance’   -- Minyi

More Information

Yellow Tea:

As one of the six varieties Chinese teas, yellow tea is rare compared to the others. Yellow tea usually implies a special tea processing similarly as green tea, but with a slower drying phase. The rubbed tea leaves are allowed to naturally ferment for a longer time and get a yellow color, which is also present in the tea soup. Fine Chinese yellow tea is famous for its yellow soup and yellow leaves.

Process Steps: Withering → Heating → Natural fermentation→ Drying
